Charlotte Russe

Vanilla bavarois enriched with fresh fruit and bitter almond cookies. Finished with a thin layer of glaze, enclosed with ladyfingers, and adorned with a bow.
Sabayon

A bavarois based on pâte à bombe, flavored with Marsala. As garnish, there are small bitter almond cookies incorporated, decorated with yellow marzipan and topped with bitter almond and a red bow.
